Mashed Potatoes and Arugula

2 1/2 lb              potatoes, scrubbed and quartered
1 1/2 bunch         arugula, stemmed
1 C                     buttermilk (or milk, cream or non-flavored yogurt)
1/4 t                   ground pepper
 
Quarter and boil potatoes until you can stick a fork in them. Drain off all but a tiny bit of water and combine the lot with milk and pepper. Mash the potatoes and then stir in the arugula. The heat of the potatoes will wilt the arugula and then you know you are all set for a tasty side-dish!
