Arugula with Smoked-Gouda Quiche

1 T                 extra-virgin olive oil
1/2 C              green garlic, thinly sliced (or use onions!)
3 C                arugula (or other fresh greens)
1 C                 milk
3/4 C (3 oz)    smoked Gouda cheese, grated
3/4 t               salt
dash               nutmeg, grated
3                    large eggs

Prepare (or buy!) your favorite savory crust and pop it in the fridge, then pre-heat the oven to 350°. Place chilled crust on a lightly floured surface. Roll out dough and place into a 9-inch pie plate. Bake at 350° for about 10 minutes or until lightly browned. Allow to cool.

To make the filling, heat oil in a large skillet over medium-high heat. Add green garlic; sauté about 5 minutes. Add arugula; sauté about 2 minutes.
Combine milk and remaining ingredients in a bowl; stir well with a whisk. Stir in greens mixture. Pour filling into crust. Bake at 350° for 35 minutes. Eat and enjoy!
